We like granola bars around here. I've been messing around with a recipe and came up with this one. It's good! Really good! What's great about granola bars is the versatility... you can add anything! Next will be some M&M granola bars for the kids, they aren't diggin' the cranberries as much as their parents.
White Chocolate Cranberry Granola Bars
2 1/2 cups old-fashioned oatmeal
1/2 cup sliced almonds
1 cup shredded coconut, loosely packed
2/3 cup honey
1 1/2 teaspoons pure vanilla extract
1/4 teaspoon salt
1 cup craisins
1/2 cup white chocolate chips
Preheat your oven to 350°F. Butter an 9x13" baking dish pan.
Toss the oatmeal, almonds, and coconut together on a sheet pan and bake for 10 to 12 minutes, stirring occasionally, until lightly browned. Transfer the mixture to a large mixing bowl. Reduce the oven temperature to 300°F.
While the mixture is still warm, stir in the honey, vanilla and salt until the mixture is well coated, then the craisins and white chocolate chips(be sure these don't clump together or one lucky person will get a block of white chocolate in their bar). Pour the mixture into your prepared baking dish and press.
Bake for 25 to 30 minutes, until light golden brown. Cool and cut into squares.

(By the way, Whole Foods has some really good raw honey at $4.79(ish) per 16oz. A friend of my tipped me off on this. Good stuff!)
